Pancakes with rice pudding,
I have found to myself one new way to make pancakes. They are easy to make and tastes very good. Have made them now several times and will continue. Have also thought to try to make waffles with rice pudding. After I have tried and I like the result, I will also share it to you. Here is my used recipe:
Ingredients:
400 gr. rice pudding
3 - 4 egg
1 dl. flour
1-5 table spoon sugar
little bit cardamom
Add all ingredients into a bowl. Mix well together. Fry with butter. I had them together with cottage cheese and quark mix together with mixed fresh raspberries.
That amount of mix gave me 14 pancakes.

Strawberrie croissant
Yesterday I decided to make one of my meal something good. I decided to make croissants with strawberries and quark creme. Since it was good, I decided to share it with you.
I made it bit easy way and had ready made puff pastry, you can make your own if you have bit more time.
Ingredients:
Croissants:
1 package puff pastry
1 egg
1 tablespoon sugar
1/2 teaspoon salt
Creme:
200 gr vanilla quark
2 dl Whip cream
1/2 teaspoon cardamom
Garnish:
Strawberries
Powder sugar
Baking the croissants:
1. Put a own to 225 degrees. Cut out squares in size of 12-15 cm. Divide them as triangles.Roll together.
2. Put the croissants on the baking plate. Whip up egg with sugar and salt and brush the croissants with egg.
3. Bake them 5-10 minutes or until they get a nice golden brown color.
Whip up whip cream. Mix with hand quark and cardamom in. Make sure that it is well mixed but be careful that you don't whip it hard, since it might happen that whip cream will be butter instead.
Divide croissants to half. Take a good spoon creme and put on the croissant half's. Slice strawberries and top the croissants. Top bit with a powder sugar.
I can say that they tastes really good. Can kill for them.

Juicy buns for coffee,
In Wednesday I baked some buns for coffee since I knew that I will get guests on Thursday and it would be good to offer home made refreshments for the coffee. So, I decided to bake a little. This time it was a buns with vanilla. Good ones in my opinion.
Ingredients:
50 g yeast
3 dl milk, lukewarm
1 ½dl sugar
1 krm salt
3 egg
225 g butter, room temperature
11–13 dl wheat flour
Filling:
150 g butter, room temperature
1 ½ dl powder sugar
1 tsp vanillasugar
Decoration:
1 egg
pearlsugar
Amount of buns: 25-35 pieces.
1. Crumble the yeast into the bowl. Add milk and mix until yeast is melted.
2. Add sugar, salt, egg, butter and flour, little bit on the time. Knead the dough hardly a fiew minutes. Let it rise under baking towel for ca 40 minutes.
3. Filling: Mix together all the ingredients. Make around 25-35 small portions to the plate and put it to freezer while dough is rising.
4. Knead the dough through and divide in to ca 25-35 bites. Make a ball of every dough bite and put them in to the aluminum molds and on the baking plate.
5. Take out the butter from freezer and pressure down one butter portion in each bun. Let buns to rise ca 25 more minutes. Turn own to 250 degrees.
6. Brush the buns with wiped egg and sprinkle with pearl sugar.
7. Bake the buns in the middle of the own. Let them cool down on the bars.

Banana pancakes,
Today I tried something new for my snack meal. A banana pancakes. I had got tips some time before but I have not had chance to try it before. So today a nice sunny Sunday I tried it. I can say that they taste actually very good. Easy to make and good to eat in the same time I got all the proteins I needed.
Ingredients:
1,5 bananas
3 egg
little bit salt
I sliced bananas. Crack the eggs over sliced bananas. Crush and mix it smooth mix and fry on both sides. I had them with blueberries and glass of cold milk and I felt like i was in heaven.
That amount of mix gave me 12 pancakes.

Birthday cake,
Day before yesterday I had a big baking day. I needed to bake some cakes for my husbands birthday yesterday. It feels so good to bake, when I know, that there is someone who will eat it. I wanted to make an easy cake and something, what is not very sweet, since I do not like very sweet things and in the same time, I wanted that it would look and taste as home made.
Ingredients:
3 egg
4,5 dl flour
3 dl sugar
188 gr butter, room temperature
3 teaspoon vanilla sugar
2,5 teaspoon baking powder
1,5 dl milk
1,5 teaspoon salt
4 peach halves
Topping and filling:
500 gr quark
4 dl whip cream
1 teaspoon vanilla sugar
Decorations:
400 gr blueberries - share as decorations and in the middle of the cake as well.
250 gr strawberries
Whip butter and sugar together with to a smooth mass. Add egg one by one. Mix all dry ingredients together and add to egg and butter mix. Mix it and add milk. Chop peaches to small bites and add it to the dough. Mix it until it is smooth dough. Pour the dough to the form and bake 40-70 minutes in 175 degrees. Depends how big baking form you have and how much dough you put to the baking form. Take it out and let it cool down. Take it out from the form and put it to the plate.
Whip up cream. When it is hard, mix it with quark and vanilla sugar. Divide sponge half in the middle. Half a quark mix put in the middle of the cake. Cover it with blueberries and add other half of cake sponge. Cover with rest of the quark and whip cream mix. Slice a strawberries. Decorate cake as you want. For me, it was just that I wanted it to see out a homemade and that it has a good taste. For me, it remembered cake what it is home made and what is similar, we have had during a years. I did not decorate as proff, but the taste is more important this time, when looks this time.

Cake with chocolate and peaches,
Yesterday I had a big baking day. I needed to bake some cakes for my husbands birthday today. It feels so good to bake, when I know, that there is someone who will eat it.
To his work I was bake around pound cake. Here is recipe for that cake.
Ingredients:
3 egg
4,5 dl flour
3 dl sugar
188 gr butter, room temperature
3 teaspoon vanilla sugar
2,5 teaspoon baking powder
1,5 dl milk
1,5 teaspoon salt
4 peach halves
Topping:
200 gr dark chocolate
80 gr nougat
50 gr almond shavings
Whip butter and sugar together with to a smooth mass. Add egg one by one. Mix all dry ingredients together and add to egg and butter mix. Mix it and add milk. Chop peaches to small bites and add it to the dough. Mix it until it is smooth dough. Pour the dough to the form and bake 50-70 minutes in 175 degrees. Take it out and let it cool down. Take it out from the form and put it to the plate.
Melt chocolate and nougat. Cover cake with it and top it with almond. Let it cool down. Best will be until next day at least. Enjoy it with a cup of good coffee.

Cardamom coffee bread with almond,
For a while ago, I made a little bit different coffee bread, what I had never done before. I have eaten little bit similar one and have wanted to try as well, but I have not had courage to do it, because I do not believe much to my competence to succeed in some baking things. Since we had a Lions board meeting in our home, when I wanted to do something good for coffee and I thought, that I can try. If I do not fix it, I can go and buy something from bakery. For my surprise, I made it and it tasted very good. Only negative part in my opinion was, that I had bit too much Bourbon vanilla. It took taste over, since I was but bit more, than recipe had. Here is recipe for the coffee bread.
Ingredients:
Wheat dough:
30 gr yeast
250 gr milk
110 gr butte, room temperature
570 gr wheat flour
3 gr salt
5 gr ground cardamom
1 egg
110 gr caster sugar
Filling:
120 gr sugar
200 gr almond flour
150 gr butter, room temperature
10 gr vanilla sugar
Cardamom
Baking:
2 egg for brushing
Sugar
Cardamom
Syrup:
1 dl water
1 dl sugar
First step is to do wheat dough. Crumb yeast into a bowl what you have with your kitchen assistant. Warm up milk until it is lukewarm and mix it with yeast. But other ingredients into a bowl and let assistant work in a slow tempo. When all is mixed together, you take a speed up a little and let it work 10 minutes until it has build a gluten and gets a shiny and nice surface.
Take dough out from the bowl and put it to baking board what you have covered with a bit flour. Let dough rest there 15 minutes under the cloth . Roll dough out until it is 3-4 mm thick.
Make a filling. Mix almond flour, caster sugar, vanilla sugar and little by little a butter until you have smooth filling. Wide a even layer filling over the rolled dough. Sprinkle on sugar and cardamom, roll together to lengths. Take a scissors and cut a ankle, ca 1,5 - 2 cm big bites. Cut almost all the way, but not all through. Fold the pieces what is left and right alternately, but let them sit together as one wheat length. Divide the long length to 4 even lengths.
Concoct sugar and water to syrup and let it cool down.
Put the oven to 180 degrees. Let the wheat length rise under the cloth ca 1 -1,5 hours. Brush with whipped eggs the lengths and cover with sugar and cardamom. Bake 2 lengths on the time, about 20 - 25 minutes or until it has got a nice color. When you take them out in the oven, brush every length with syrup.
I can say, that I liked the end result. It was perfect for the cup of coffee and it lasted for a while but not for a very long time since all liked it. I will not be last time I will bake it. There will come other times as well, when we get the guests.

Blueberry pie,
Yesterday was a slow Sunday at our home. In some reason I got an idea to bake something for the afternoon coffee and the result was a blueberry pie. Since it was good one, I decided that I can share the recipe with all of you :)
Ingredients:
2 egg
2 dl sugar ( I used only 1 dl)
50 gr butter or margarine
1 dl milk
3 dl flour
1 1/2 teaspoon baking powder
1 teaspoon vanilla sugar
1 tablespoon potato flour
250 gr frozen or fresh blueberries
Powder sugar
Whip first eggs with sugar. Smelt butter and add milk. Let it boil up and mix is fast with whipped eggs. Add flour together with baking powder and vanilla sugar. Mix it up.
Take a form with diameter about 21 cm and 4 cm high. Butter it in if it not an silicon form.
Cover the bottom with blueberries. Pour a tablespoon potato flour over them and mix berries with flour, so that berries are covered. It is good to do it with frozen berries, so that cake would not be runny.
Bake in 175 degrees in lower part of oven for ca 40 minutes.
Take it out, let it cool down bit and cover with a little powder sugar and it is ready to eat. It also can be eaten together with vanilla sauce or ice-cream, sourcream or so many other ways.

Easy breakfast,
I do not make often breakfast. Usually I am quite happy to take a bite of crispbread, but once in a while miracles happens and I take bit longer time to make something else. Usually, it is something easy and good and something I will get some proteins out.
Most often times it is egg muffins I have made. Very easy to make after my opinion.
Ingredients:
6 egg
1 dl milk
salt
black pepper
half fine chopped red, yellow, green or orange pepper
ca. 15 cm fine chopped leek
5 slices fine chopped turkey sausage
This amount ingredients gave me 9 eggmuffins.
I used a silicon cupcake form. I filled bottom with chopped red pepper. After that added chopped leek and sausage. I whipped up eggs with salt and black pepper and milk. Pour egg and milk mix over the vegetables and sausage. I did not fill forms totally, since they are growing bit while they are in oven. I have them usually in oven about 20 minutes in 200 degrees.
They taste good and in my opinion they are very easy to make.

Gluten and lactose free apple cake,
For some weeks ago, we had guests our home and I was need to make something for the coffee. Since I have got problems with gluten, the cake was have to be gluten free and also lactose free, since that allergy I have had since one year after moving to Sweden. Quite strange, but I am happy that there is so many possibilities to get good food what is free of gluten and lactose.
Here is recipe for my apple cake what is free of lactose and gluten but also what tastes very good in my opinion. Recipe for the bottom I got from my friend, who could help me in that question. I am happy that I have someone to turn in those kind of questions and also discus about that kind of food.
Ingredients:
Bottom:
120 gr cold lactose free butter
120 gr rice flower
130 gr almond flower
0,75 teaspoon salt
1 large egg
Filling:
7 medium apples (little bit sour)
3 egg
300 gr cottage cheese
1 dl or less sugar
3 teaspoon cinnamon
2 teaspoon cardamom
Mix all ingredients for bottom together and spread it on a baking form. I used a silicon baking form and it did not needed to use any butter or something to bake, but if you are using glass or ceramic baking form, when you need first grease the form and when spread dough out on it.
Peel and take out seeds from apples and chop them. Mix chopped apples with cinnamon, cardamom and sugar. Fill the cake bottom with apples. Mix together egg and cottage cheese. Pour over the apples. Bake in 180 degrees for 45-55 minutes.
Serve together with vanilla souse or vanilla ice cream.
I can say that it tasted good. Not much difference that instead usual wheat flour I had used almond and rice flour. Taste was still same as cake has only perhaps little bit smoother taste. Hard to explain :)

Sponge cake,
It is good to be back at home with my family here in Estonia. Since I love to bake and home in Sweden, we have not very often visitors, whom I could bake. Here, family likes it when I am baking and eats it up.
Today I made one juicy sponge cake. Here comes recipe.
Ingredients:
4 egg
4 dl. caster sugar
5 dl. wheat flour
2 teasp. baking powder
250 gr. butter
2 lemon
0,5 dl. water
Whip up eggs and caster sugar to strong foam. Mix flour with baking powder and add it to egg foam. Mix it all together. Melt butter around 90 seconds in microwave oven and mix all together. Grate the zest of lemons and add to the dough as well as lemon juice from both lemons and mix it last time.
Put the dough in greased mold and in to the oven in 175 degrees for at least for 40 minutes or more. Deppends on mold and amount of dough.
Serve it with cold ice-cream, sorbet or just how you want. I can say that my family liked it and it tasted good.

Easy bread,
Last week I got one easy recipe for bread, from one TV program I looked. The recipe was look quite interesting, so I wrote it down and decided on weekend to try. It was as easy as they promised it to be.
Ingredients:
1 kg flour
9,5dl. lukewarm water
2 tbl spoon sugar
2 tbl spoon salt
18 gr dry yeast it is same as 75 gr. ordinary yeast
1 egg
Mix flour, sugar, salt and dry yeast very well through. Add water and mix it very well through. You do not have to knead the dough. Cover with plastic and let it stay in fridge over night. Next day around lunch take it out and let it warm up to rooms temperature. Take a baking tray and cover with baking paper and lightly with flour, because dough is not very hard. When dough has became to rooms temperature, you can divide dough for 2 equal portions or 12 smaller buns. Cover the breads or buns with whipped egg and bake them 1 hour in 200 degrees.

Sweet braid,
In Sunday I finally took time and baked after a while again. I really felt good to do it, since I love to bake. Unfortunately there is not many, who would eat it, else I would love to bake much more often.
Ingredients:
600-800 gr. wheat flour
4 dl. water or milk
60 gr. butter
4 tbl spoon sugar
1 teaspoon salt
50 gr yeast
1 egg
200 gr. hazelnut cream
150 gr. dark chocolate
200 gr. dried apricots
crush yeast to the bowl and add sugar. Mix it until yeast has melted. Add salt. Under the time warm up milk or water up to ca 35 degrees and add it to melted yeast and sugar mix. Melt all the butter and add it to the mix. Mix it through and make sure that all sugar is melted. As a last add flour little in a time and mix it. Knead until dough is fast. If you can, take it out of bowl and let it stay in the counter about 1 hour. After that divide it 3 equal shares.
Roll all shares in equally out in squares. Chop the apricots and chocolate . Cover each square equally with hazelnut cream and chopped apricots and chocolate in full length. Roll it up. Braid the rolls and lift to the baking pan. Whip up the egg and cover the braid. Let it stay out another 35-40 minutes. Heat oven up to 200 degrees and after it has stand out, bake it 35 minutes. After that it is ready to eat.
This braid was filled with hazelnut cream, chocolate and apricots, but it can be filled actually with anything you want. This dough was quite sweet, since I had used sweet yeast and little bit more sugar, but this same dough can be made even to salt pastry. Just use ordinary yeast and little bit less sugar and little bit more salt and salty filling.
Enjoy it with good cup of coffee.

Pickled pumpkin,
Today I made first time homemade pickled pumpkin. As I wrote before, it is first time for me to do it, since it has been first year ago, I ate first time it. Since I did not have any recipe self, I asked it nicely from my aunt. Now it is done and waiting to be eaten later, since it wants to stand bit so that pumpkin can take all spices into it.
Here comes recipe I used, if someone would like to make it after.
Ingredients:
1 kg cleaned and chopped pumpkin
3/4 liter water
300 gr sugar
5 corn allspice
7 corn clove
3 tbl. spoon 30% plain vinegar
small pieces cinnamon bark
Clean and peel pumpkin and chop it small square bites. After that make pickling water. Put water in one big bowl or pot. Add sugar and mix it well through until all sugar is melted. After that add all spices and vinegar. Pour all over the pumpkin and let it stay over night in chilled room.
Day two let it boil. Boil around 10-15 minutes and mix it as much as you can carefully, so that pumpkin does not get mashed.
Ler it stay at least couple of days and Bon apetit :D Nice salad for main course :)

Plum pie,
Last weekend I took bit time for baking since I had got some nice and beautiful plums and I could not eat them all, so, instead let them go bad I decided to bake a pie. Had never done one of those before, so, it was time to challenge myself bit ;)
As I also was promise recipe, when I must admit, reason, why it comes first now is easy - time just flies and have not had much time before. So, today evening I decided to take bit time for myself from studies and do other thins as well, what is needed to do ;)
Here is recipe for plum pie as promised!
Ingredients:
Bottom:
125 g butter what has room temperature
3 dl flour
2 tbl.spoon Brown sugar
2 tbl.spoon water
Filling:
150 g. pealed almonds
1 1/2 dl. sugar
2 egg
3 dl. creme fraiche
lemon peel from half a lemon
1 liter fresh plums
Garnish:
powder sugar
Mix together butter, flour, sugar and water for a dough. Press it out to pie form, ca 28 cm. Prick it with fork. Let it be in fridge for 30 minutes
Crush almonds. Mix together all ingredients for filling and fill bottom. Divide plums to half and remove the stone. Push them lightly into filling. Bake lower part in own in 225 degrees for 30 minutes.
Serve when it is lukewarm with vanilla ice-cream, vanilla sauce or whip cream. Just before serving, garnish pie with powder sugar.

Budapest roll,
Ingredients:
140 gr ground hazelnuts
8 egg whites
2 dl sugar
1 dl quick marsan powder (From Ekströms)
3 dl whip cream
150 gr. Philadelphia cream cheese with chocolate
240 gr peaches
Chop hazelnuts if they are whole.
Whip egg whites hard and fluffy.
Mix grounded hazelnuts, sugar and marsan powder and add the mix with whipped egg whites.
Cover baking tray with baking paper and spread out the dough.
Bake 20 minutes in the middle of the own in 175 degrees.
When cake has bit cooled down, when take it out of form. On the table put wet towel and new sheet baking paper on it. turn the cake bottom on it and tear off the baking paper from the bottom. Cover it with baking form and let it cool down until it is cold.
Spread chocolate Philadelphia cream cheese first on it. Whip up the whip cream and cover cake with it. Top it with sliced peaches and roll it together.

Midsummer drink,
In the midsummer evening we had midsummers party and celebrated longest day and shortest night. During that small gathering with friends and family, many of us had something to do. One of the tasks was to make a midsummer drink.
Here it is:
3cl Vodka
3cl Cranberry juice
1cl Cointreau
1cl Lime juice
Mix and Shake. Pour it to cocktail glass and fill rest of the glass with Red Bull and bit apple cider.
I can say, that we all liked it. It was not very sweet and had nice summer fresh taste.
Just don´t forget, if you drink alcohol, don't sit behind car wheel and start to drive. Nothing good comes out of that!!!

Rhubarb - Strawberry crumble pie,
For some weeks ago, I made rhubarb - strawberry crumble pie. I promised to put up my recipe, but I had forgot, until today, when I started to write into my blog again. So, here comes my promised recipe for the cake :)
Bottom:
9 dl flour
2 dl sugar
2 tablespoon vanilla sugar
2 tablespoon baking powder
300 gr table warm butter
3 egg
Filling:
0,5 kg rhubarb
250 gr strawberries
2 tablespoon potato flour
1 tablespoon sugar
Crumble:
150 gr butter
4,5 dl oat cereals
3 dl sugar
- Before you start to do everything else, clean and chop rhubarb. Place them to bowl together with strawberries and add sugar and let it stay until it is time to use them.
- Make ready bottom - Mix all dry ingredients and mix them with butter. Add eggs and when it is ready, spread it to buttered cake form.
- Make ready topping - mix all butter and sugar with oat cereals until it looks as crumble.
- Take the cake form what is filled with bottom and make it ready. Add potato flour to rhubarb and strawberries and mix it well through. Take off syrup what has gathered when they stood with sugar. put the filling to bottom and spread crumble mix all over it. For me, the amount crumbles was that much that I could used it on two cakes. So I freeze down one portion for later use.
- Bake in oven 35-45 minutes in 200 degrees.
Pie is good to serve together with vanilla sauce or with cold vanilla ice-cream.

Rhubarb pie,
Yesterday I decided to bake again after a while. In menu was rhubarb pie, since I decided to try it. Couple of times before I have baked now berry cake and decided to try bit different this time.
Bottom:
4,5 dl flour
1 dl sugar
1 tablespoon vanilla sugar
1 tablespoon baking powder
150 gr table warm butter
2 egg
Filling:
0,5 kg rhubarb
1 tablespoon potato flour
2 tablespoon sugar
Top:
4 egg
4 tablespoon sugar
4 tablespoon flour
- Before you start to do everything else, clean and chop rhubarb. Place them to bowl and add sugar and let it stay until it is time to use them.
- Make ready bottom - Mix all dry ingredients and mix them with butter. Add eggs and when it is ready, spread it to buttered cake form.
- Make ready topping - whip eggs strong foam. If you have hand mixer, when whip first egg whites hard and after that in separate bowl egg yellows and sugar. If both are hard, when mix them together and add flour one spoon at time.
- Take the cake form what is filled with bottom and make it ready. Add potato flour to rhubarb and mix it well through. Take off syrup what has gathered when they stood with sugar. put the filling to bottom and spread egg and flour mix all over it.
- Bake in oven 35-45 minutes in 200 degrees.
When it is done, let it cool down bit. Serve it together with vanilla souse or vanilla ice-cream.

Budapest long / Budapesti rull
Yesterday I took time to bake again after a long while, since I did it last time. I decided to try to make my favorite cake here in Sweden, called Budapest long. Now, I can share the recipe, since we tried it yesterday and it was eatable and tasted very good :D
Ingredients:
100 gr ground hazelnuts
6 egg whites
2 dl sugar
3/4 dl quick marsan powder (From Ekströms)
2-3 dl whip cream
200 gr fresh raspberries
Hack hazelnuts if they are whole.
Whip egg whites hard and fluffy.
Mix grounded hazelnuts, sugar and marsan powder and add the mix with whipped egg whites.
Cover 20x30 cm cake form with baking paper and spread out the dough.
Bake 20 minutes in the middle of the own in 175 degrees.
When cake has bit cooled down, when take it out of form. On the table put wet towel and new sheet baking paper on it. turn the cake bottom on it and tear off the baking paper from the bottom. Cover it with baking form and let it cool down until it is cold.
Whip up the whip cream and cover cake with it. Top it with fresh raspberries and roll it together. You can cover it with powder sugar, chocolate or as I did, fresh strawberry jam :) Whip cream has no sugar added, since bottom has already sugar and marsan powder has some sugar, when it keeps good balance with sugar and fresh taste.
Vajalikud ained koogile:
100 gr peenestatud pähkleid
6 munavalget
2 dl suhkrut
3/4 dl kiir marsanpulbrit (Ekströmsilt)
2-3 dl vahukoort
200 gr värskeid vaarikaid
Purusta pähklid, kui nad on terved.
Vahusta munavalged tugevaks ja kohevaks vahuks.
Sega omavahel kokku purustatud pähklid, suhkur ja marsani pulber.
Sega omavahel vahustatud munavalged ja kuivained.
Kata 20x30 cm koogivorm küpsetuspaberiga ning vala tainas vormi ja küpseta 20 minutit 175 kraadi juures.
Vahusta vahukoor ning kata koogipõhi sellega. Aseta peale värsked vaarikad ning keera rulli. Koogi võid katta tuhksuhkru, sokolaadi vöi nagu minu koogi puhul - maasika toormoosiga. Selle koogi puhul ei ole vahukoorele lisatud suhkrut, sest suhkur mis on põhjas sees, teeb selle koogi niigi magusaks ja seega aitab vahukoor ja vaarikad tasakaalu hoida.
Kooki võid serveerida kohe või lasta tal natuke aega seista ja siis serveeriga koos kohviga.
