Wille and summer,


Seems that our Wille loves summer time, because that is one time, he is like small pain when we are going to bathroom to wash hands or teeth's. He want to jump up into sink and drink running water. Sometimes, when we have forgot door to bathroom open, we can find him sleeping at the sink and waiting until we open the tap and water starts to run  :)












Tiramisu,


Today's dessert on the menu in the evening will be Tiramisu. Something what I have done also once before, but thought since it had been over a year when I did it last time, I thought to make it again. Will see how it will taste in the evening :)


Ingredients for Tiramisu:
6 egg
500 gr mascarpone cheese
150 gr sugar
0,5 dl whiskey
savoiard biscuits
3 dl strong coffee
Cacao powder.

Separate egg whites and yellows. Mix sugar and egg yellows until they are whipped up. Add mascarpone cheese and whiskey and mix it all well through. Whip up egg whites and when it is done, mix all it together in one bowl. Take one form, where you will put dessert in and start to cover it with biscuits. First dip biscuits through the strong coffee. When bottom of the form is covered with biscuits add some of the cheese cream top of it. Fill another layer with biscuits and fill rest of the cream over it. Let it stay in fridge at least 3 hours. As longer it stays there as more tastes will be blended. Just before serving cover it with cacao powder.

Instead of whiskey can be used some other kind of liqueur. I used my husband's own whiskey, since it has leaves good taste on the desserts, when I have been used it before.

Vajalikud ained Tiramisu'le:
6 muna
500 gr. mascarpone juustu
150 gr. suhkrut
0,5 dl likööri või whiskyt
kakao pulbrit
3 dl. kanget kohvi
savoiardi küpsiseid

Eraldada muna valged ja kollased. Vahustada muna kollased suhkruga tugevaks vahuks. Lisada juurde mascarpone juust ja suhkur ja viski ning vahustada ütlaseks massiks. Teises kausis vahustada munavalged tugevaks vahuks. Lisada vahustatud valged vahustatud munakollaste ja juustu segusse.
Võtta küpsetusvorm või mingi muu kõrgemate äärtega nõu ning hakata küpsiseid sinna katva kihina laduma. Enne vormi panemist kasta küpsised kohvist läbi ja asetada siis vormi. Kui vormi põhi küpsistega kaetud, vala peale pool juustu massi. Vajuta ühtlaseks kõik. Lao peale teinekiht küpsiseid ja kata need ülejäänud juustu massiga. Lase külmkapis seista vähemalt 2-3 tundi enne serveerimist. Mida kauem seisab see külmkapis, seda paremini maitsed segunevad omavahel. Enne serveerimist kata magustoit õhukese kakao kihiga. Vorm mida mina kasutasin ja siin pildil on 32x23x7 cm.


Light and fresh summer salad,


Since it is summer time and we all prefer to have something light, when I have liked to make one of my favorite light summer salad.

Ingredients for salad:
1 cucumber
2-3 tomatoes
3-5 radish
7-10 green onion stalk
2 dl. sour cream or creme fraiche
1 teaspoon sugar
1 teaspoon salt
Pepper

Chop cucumber, tomatoes, radish and green onion. On the other bowl mix sour cream with sugar, salt and pepper and mix it well through. Mix all vegetables and sauce together and let is stay a little time, so that tastes can mix together. You can eat it as it is or next to dinner. That is one of the favorite in our family.

Rhubarb - Strawberry Dessert,


Last weekend we had small barbecue evening and when we made also dessert for the food, since no party can't end without a dessert. This time it was on menu Rhubarb-Strawberry dessert with quark cream. Rhubarb - strawberry cream had a bit sour taste, since I did not put that much sugar, but on the other hand the quark creme was sweeter and that together with Rhubarb cream was very good and had perfect taste and did not had any sour taste.



Ingredients for rhubarb-strawberry cream:
ca. 300-350 gr. cleaned and chopped rhubarb
400 gr. strawberries
1,5 L. water
2 soup spoon potato flour
2,5 dl. water
150-200 gr. sugar

Put rhubarb, strawberries, sugar and water to boil. Let it cook until rhubarb has been well cooked. If you think that there is not much sugar, you can add more, since cooking the rhubarb, it might need more sugar due rhubarbs own sugar disappears with cooking.
When you like how it has cooked and you like amount sugar, when you need to mix small amount cold water with potato flour and when it is mixed well, pour it slowly into rhubarb - strawberry cream, same time mix the cream as well, else it takes clumps in and does not taste very good anymore. If you want to have more thicker consistence, when just take more potato flour. When it has been cooked couple of minutes, take it off from the heat and let it cool down.

Ingredients for quark cream:
150 gr quark (Can be with taste. I had rhubarb taste)
3 dl. whip cream
1 dl. sugar

Whip cream hard. Add quark and sugar and mix it all well together.

If you want you can decorate it with fruit. I used one fresh strawberry, but it is also nice with out it.
