Happy Easter!


I would like to wish you all Happy and wonderful Easter. Spend a good time with your family and friends and just enjoy your free time. Take a time to yourself and enjoy good food, sun and just the things you love to do.
For me, it will be time with my family and friends. We will have a bit traditional food from both Sweden as well from Estonia. Some of the traditions are different between the countries, some of them are similar. One way it is very interesting that I have possibility to take part of different traditions and in the same time keep my own traditions a live as well. Especially since it feels that not many people like to keep their traditions alive. Actually it is bit sad, but in the same time it is also understandable that times are different and changing.
Now it is time for us att have a dinner and spend time with friends and family.

Juicy buns for coffee,

In Wednesday I baked some buns for coffee since I knew that I will get guests on Thursday and it would be good to offer home made refreshments for the coffee.  So, I decided to bake a little. This time it was a buns with vanilla. Good ones in my opinion.

Ingredients: 
50 g yeast
3 dl milk, lukewarm
1 ½dl sugar
1 krm salt
3 egg
225 g butter, room temperature
11–13 dl wheat flour

Filling:
150 g butter, room temperature 
1 ½ dl powder sugar
1 tsp vanillasugar

Decoration:
1 egg
pearlsugar


Amount of buns: 25-35 pieces. 

1. Crumble the yeast into the bowl. Add milk and mix until yeast is melted.
2. Add sugar, salt, egg, butter and flour, little bit on the time. Knead the dough hardly a fiew minutes. Let it rise under baking towel for ca 40 minutes.
3. Filling: Mix together all the ingredients. Make around 25-35 small portions to the plate and put it to freezer while dough is rising.
4. Knead the dough through and divide in to ca 25-35 bites. Make a ball of every dough bite and put them in to the aluminum molds and on the baking plate.
5. Take out the butter from freezer and pressure down one butter portion in each bun. Let buns to rise ca 25 more minutes. Turn own to 250 degrees.
6. Brush the buns with wiped egg and sprinkle with pearl sugar. 
7. Bake the buns in the middle of the own. Let them cool down on the bars.
