Cherry jam,


Yesterday at the farmers market in Jönköping I found a very beautiful and very tasty cherries. Since I did not know, what to do with them, I let them stand overnight with out eating them. Today after I had finished with strawberry jam, I decided to try to do something with cherries.
It ended very well, at least I think. I decided to make a different kind of jam, what I never had tried before and to be honest, I even could not think to put those taste together.The end result, I must say was wonderful. And most of all, it was and is very tasty. Help for that wonderful taste became from Dansukker's booklet.


Ingredients for jam:

500 g cherries
250 g bananas
2 lemons
3 dl water
1 kg Dansukker Jam Sugar
2 tbsp Vanilla Sugar



Rinse and pit the cherries. Peel and slice the bananas. Thoroughly rinse the lemon and grate the zest coarsely. Juice the lemon. Put the cherries, bananas, lemon zest, lemon juice and water in a saucepan, cover and simmer for 10 minutes. Add the jam sugar and boil for 2-3 minutes. Add the vanilla sugar. Remove from the heat and carefully skim off any scum. Pour into warm, sterilized jars, filling them all the way to the top. Seal with warm, sterilized lids. Store in a cool place.




Dark chocolate cake with blueberries,


Yesterday after a long while I baked again. Reason was simple for that, we had quests at our home and I thought it would be nice to have something good for the coffee after main course. So, I decided to make a chocolate cake.

Ingredients:

200 gr. butter
200 gr. chopped dark (over 70%) chocolate
1 dl sugar
3 egg
1 tablespoon vanilla sugar
4 dl flour
3 dl blueberries (can be used both, fresh and frozen ones)


Melt butter and mix it together with dark chocolate.Add sugar and eggs and mix it well through. Mix in flour what has been mixed before together with vanilla sugar and when cake dough is well mixed through add blueberries and turn it slowly little bit around until all dough is well mixed and pour it to a buttered form or as I used, the silicone baking form.
Bake it in the middle of the oven around 25 minutes in 200 degrees. Let it cool down.



Before serving you can decorate cake with flour sugar or I made small icing on top.

Ingredients for icing:
3 dl whipcream
250 gr. mascarpone cheese
4 teaspoon sugar

Whip cream hard and add sugar and mascarpone cheese. Mix it well through and cover the cake. Decorate with fresh berries and it is ready to eat. It is tasty as well :)


Strawberry jam,


Yesterday and today I have had  bit busy with making strawberry jam for the winter. It has been very long time, since I did make it last time, but I must admit, it felt very good to do it again :)


For 6 liters strawberry jam I used:

7,5 l fresh strawberries ( First time I used 1,5 l fresh strawberries and other time 6 l fresh strawberries)
1,3 kg jam sugar from Dansukker. (Due I made two different days jam, then first 1,5 liter jam I used  330 gr. Jam sugar 1+3 and other time I used 1 kg ordinary jam sugar)
1,1 l water (first time 3 dl water and other time 8 dl water)




I let it cook both times around 10 minutes and same time they cooked, I smashed strawberries with potato smasher, so that instead whole strawberries came more smashed strawberries in jam, since I like that more. Feels more equal mix.


After they had been cooked 10 minutes, I added sugar and let cook another 2-3 minutes. Took off the foam and I was put it to 0,5 liters jars.


Now it is cooling and later they will find the place in storage, so that it would be good to take in winter time.
