Strawberrie croissant

Yesterday I decided to make one of my meal something good. I decided to make croissants with strawberries and quark creme. Since it was good, I decided to share it with you.
I made it bit easy way and had ready made puff pastry, you can make your own if you have bit more time.

Ingredients:

Croissants:

1 package puff pastry
1 egg
1 tablespoon sugar
1/2 teaspoon salt

Creme:
200 gr vanilla quark
2 dl Whip cream
1/2 teaspoon cardamom

Garnish:
Strawberries
Powder sugar

Baking the croissants:
1. Put a own to 225 degrees. Cut out squares in size of 12-15 cm. Divide them as triangles.Roll together.
2. Put the croissants on the baking plate. Whip up egg with sugar and salt and brush the croissants with egg.
3. Bake them 5-10 minutes or until they get a nice golden brown color.

Whip up whip cream. Mix with hand quark and cardamom in. Make sure that it is well mixed but be careful that you don't whip it hard, since it might happen that whip cream will be butter instead.

Divide croissants to half. Take a good spoon creme and put on the croissant half's. Slice strawberries and top the croissants. Top bit with a powder sugar.

I can say that they tastes really good. Can kill for them.

Bon appetit!

Fantastic midsummer,

Another weekend is on the way to end. It has been a midsummer weekend in Sweden. A little bit different compared with Estonia, since there is always the same days midsummer, here in Sweden on the other hand is always one Friday and Saturday.
This midsummer have been fantastic. In midsummer evening we had friends over and started with traditional midsummer lunch. A Swedish traditional midsummer lunch is new potatoes, sour cream and herring. For that you have to have a small glass of midsummer snaps and of course beer. For me, who does not like Swedish sweet herring, I had cold smoked salmon and turkey sausage. So many asks why I do not like herring here in Sweden. Answer for that question is easy. In some how, in Sweden it is much more sweet than I am used from Estonia. That makes that I miss herring from Estonia or I have to make my own marinade. This year I missed that to do on time, since I was almost 10 days in hospital again.

After lunch one of our friend went home to change the close and came back. In the evening I had made a potato salad.  Bit mix from traditional Estonian and Swedish one. We had barbecued chicken for it and tomato salad with cucumber and red onion. Last one is something I have really started to love. It gives so good taste to salad and to the rest of the food.

Another tradition in Sweden for midsummer is a strawberry cake. Dessert for us instead this year was an Irish coffee and strawberries. Top of that we had a bonfire what is another tradition I have with me from Estonia and Apples to Apples, a board game for interesting evenings.
Yesterday we had an cozy midsummer day. We had relaxed morning and lunch. Took a small trip to Jönköping. Visited our allotment. Looked how our vegetables have grown, since I could had not visited it since my visit on hospital, but yesterday I could do it. During a day I read my new book from E L James. Grey has arrived. A Christians story :D

On the evening I got a visit from Estonia. My old schoolmates from Jänedas time visited us. They had finished their object in Norway one day earlier and decided to take another road to Stockholm and it was through Jönköping and us. Felt actually very good. We talked bit about our school time, what have happened since we finished our agricultural education and life after that. We made another new memories. One thing I am actually very sure. My dog found definitely a new weakest link. Sally got so much sausage and chips and strawberries that I and Tommy was surprised that, this small cute ball of fur did not got sick. I think Sally was on the seventh heaven. Her life can be good sometimes in her opinion. We had really good time with food, laugh and talks. As I wrote before. A new memories was made.

Today after breakfast, we followed the guys to Ikea and after that we took a relaxed day at home with our little family. Sally has been very tired :) Not surprised. She was woke until I went to bed around 1 am. We have had good walk with Sally. Well needed as well after a good food.
Have a nice evening,

Hello June,

New day, new week and new month.
Time just flies I can say. So many things have happened and on the way to happen. Feels quite good and same time quite scary.
For to start, when my second year as president for local Lions Club in Jönköping is almost over. Just some small things left and I can take a small break for summer before my third year as president. This year has been very interesting. Much have been achieved and a lot has been seen. It has a year full of challenges but also that I have learned quite much. Have met new people and seen some more beautiful places in Sweden. I have attended on different meetings and the latest one was the National meeting in Lund. Definitely not a last time I will visit Lund. The bit I saw, just made me more curious. We have had a interesting member meetings in club. In last one we visited Gunillaberg. A place what I can recommend to visit if you are interested on art, nature and just relaxing time. For me it was first time to visit that place but I am sure that there will be more times and with a better camera. After that we had a good meeting and dinner among with members and partners. The thing what is left, is to deal out the culture stipendiary on the Swedish National day.
I have had bit rough times with my health. I just have got tired to have a doctor who has made an surgery and have been very nonchalant and careless with his work, so I have to have a new surgery to get another miss to fixed. That has not been my plan for this year, since I thought already last year, that I had too many unnecessary surgeries when other doctors tried to fix misses. So, I do not know anymore, should I cry or should I laugh. Both in the same time perhaps. I know just one thing - all this takes quite much strength.  I just have to hope that it will be the last one, but in some how I am not sure on that. On the same time it turned around my summer travel plans, but I am happy that it can be solved. Will see some other places instead and hopefully soon as well my family.
Else I have one more examination left and after that I have finished economy education. Feels quite good. On Thursday it is hopefully last examination and after that the world will be open hopefully. I am ready to face the world or as ready as possible.
May has been month with full of challenges. It would be interesting to see what June has with it. At least I am happy over my achievement on the beginning of the month. My first run what I try to remember with good memories as well other good memories, what I have gathered during this month.
Now it is time to go and hug my pillow. Tomorrow is new adventures what are waiting for me. Can't wait it :) Many good plans and ideas of places to visit.
Good night and sleep well!
