Shrove Tuesday,


Next week in Tuesday will be shrove Tuesday and that day there are popular special buns with whip cream filling. It is also tradition in Estonia among with so many other traditions on that day.
We start first to sledge down from the hill. After the traditions and believes, the one, who will have longest ride, will have tallest linen in autumn. Another thing what we have as tradition on that day, we eat after sledge ride pea-soup. The best would be home made with smoked ham or bacon inside. Also we cook pig hooves and eat. Some people does not find it a very interesting but that was tradition in old times, since after that when the meat was eaten, then parents made the plaything out of bones to children so that they could play with something. As it comes for dessert, when we ate buns.
Today I tried to bake some of those kind of buns. It have been my second try. Last year I was try first time, but I must admit, this year was the result much better. They had grown more and dough was more full of air. One reason, why I wanted to try to make self, was because here in Sweden those buns are so sweet. If we in Estonia are used to have them with whip cream and cranberry jam, when here they are with whip cream and marzipan or whip cream and vanilla cream. That makes them very sweet on the other hand, since cranberry jam usually is not that sweet and that takes sweetness off. I also used cardamon in buns, because I truly love cardamon in buns. I love the smell and I love the taste.



So, here are ingredients in my buns:

100 gr butter
3 dl milk
50 gr yeast
½ teaspoon salt
1 dl sugar
1 egg
½ teaspoon ammonium carbonate
 ca 1 l wheat flour

Mix butter and milk and heat them together up to 37 degree, what should be a normal hand warm.
Mix sugar, yeast, ammonium carbonate and salt with each other until yeast is melted. Add warmed milk and butter into yeast and one egg. Mix it all together with flour and let it stay under covered around 35- 40 minutes. Take dough out of bowl and make buns. You will get between 9-15 buns out of dough. Depends how big buns you want. Let them stay around 30 minutes more on baking plate before you put them to oven. Heat oven up to 250 degrees. Brush them together egg or milk and put them to oven and bake them 8-10 minutes.


I had them in oven for 10 minutes and as I was also add a little bit sugar in to e egg, I got them bit more brown. 
After I took buns out and put them to cool down, I was made vanilla cream, just to put it bit together with whip cream, so that my dear fiancee would feel bit Swedish shrove Tuesday buns taste. So, the ones I made was bit mix from both countries. 

So, in the end the buns had cranberry jam inside. After that bit vanilla cream and whip cream. Lock as in the top and covered with touch of castor sugar.

Meeting with priest,


Wednesday was bit busy day for us. Not only we visited Sörgården, where we will have our wedding party, but we also had our meeting with our priest, who will hold our wedding ceremony in church in Norrahammar.
Meeting with priest was good, gave a lot information and we got also some homework to do, what we need to solve before our rehearsal in the end of March.
When our priest asked  do we have any questions about all of it, when I asking him, as there been any, who had said no in church in front of all people. He said no, and my dear fiancee got worried about that question. Now he is afraid, that I might be first, who would be tempted to say no to him in church in front of our family and friends. But how could I say no :) I can't, since else I would not get Thai food and most of all, I would not get to wake up next to my love and that would be sad. Of course, Kristi promised to kick me and hit me as well if I would leave my fiancee and that would be sad and I don't want it. How else I could explain all the blue marks, what would be left to my skin after she has been kicked me ;) So, I am stuck with him and he, boor he :D He is stuck with me :D 
Now we need to decide what psalms will be in church, what music melodies we would use on the way to altar and from the altar, we also have to decide what kind of wedding vows we will say to each other. Our priest was also very kind, since the blessing after the vows, he was agreed to say twice in both languages - in Estonian and in Swedish language. It was very very kind of him and makes that day much more special for all of us. I was appreciate it very much, when he was agree to tell that blessing in both languages.
Now, we need to decide all those things and in end of the month we will have our rehearsal. After that I can write how it went and did I said yes or no ;)

Sörgården,


As I have wrote before about where we are having our wedding party,when on Tuesday we went visit the place and the kitchen what it had, since even thought, our wedding is on 30th of April and there is still many weeks left for it, it was needed to be done. Time just flies and in next moment, our day has arrived. 
Place for our reception is nice. Has lake next by and local is exactly big enough, what should fit our friends and family, who will celebrate that day with us.
Now the things we have to thing with party are decorations, flowers, food, wedding cake and so on. One of the table decoration what we will have are the nice and beautiful candle crowns what we are just doing with Lions club. I believe, they will be very beautiful at the table.
All what is need to be solved now is, wait the people to say who will arrive to our wedding, flowers to table and still the wedding cake and food. Food is almost solved, just amount of guest is missing and then that is done :)



Snack buns,


Yesterday I  took a bit time to bake again, since I thought that we need something for breakfast in the morning before we went to make candles with Lions club :) They tasted actually very good.

Ingredients for buns:

25 gr butter
2½ dl milk
25 gr yeast
½ teaspoon salt
½ teaspoon sugar
130 gr cottage cheese
8 dl wheat flour

Melt the butter and add hand warm milk. Add yeast and mix it slowly until all yeast is melted. Add salt, sugar, cottage cheese and flour. Mix it and let it stay and grow until it is double as it was before. Form buns out of the dough and let it stand on baking plate as much as they have been grown double the size again. Warm oven up to 250 degrees, brush buns with egg and bake breakfast buns 8-10 minutes.

Last day of February,


Here we are again. Last day of February has arrived and tomorrow starts a new month already. For us, that means, that our Wedding day is not far anymore. Tomorrow, I will also remember to write about our wedding cake, since it is not nice to leave it last minute, but I just have forgot it. Now I have wrote it also to my office wall, so that I can't say that I have forgot it again. Hopefully Camilla's friend can help us, if not, when I will have a big problem. When there is only bakeries left. Lets hope that some doors are still open for the brainless :D
Today we have been at work and after that I have tried to embroider, but in some reason my embroidery machine and me, don't have same opinion about, how things should work :D So, I hope that tomorrow the machine is in better mood than it was today. I hope so. Tomorrow is also plan to make again new liver pate. Last time it came out good, so, now we have decided, that from now on, we will have only home made pate at home. No more shopping it from the shop.
Now, it is time for me to find my bed. My cold has went better, but I still feel, that I am not totally 100% well. And what would be the best medicine, if not bed and pillow. Tomorrow, I need also to make changes to our companies homepage. I have added new information to our companies blog already and in facebook, now homepage is left to be fixed. That I will do tomorrow :)



Now my dear readers, sleep well and have a nice dreams. Tomorrow will start a new month and hopefully that will bring spring among with him as well. Spring is needed. I love winter, but now I feel that this cold and snow is enough.
